Stephen Moulton Babcock (1843-1931) was an agricultural chemist and UW faculty member. He is best known for developing the Babcock test which determed dairy butterfat in milk processing, cheese processing, and the "single-grain experiment" that led to the development of nutritional science as a recognized discipline.
